Ingredients

  • Besan / Chick Pea Flour – 60 gm
  • Yogurt – 60 gm (it has to be Sour in taste)
  • Ginger Paste – half teaspoon
  • Green Chili Paste – half teaspoon
  • Red Chili Powder – half teaspoon
  • Turmeric Powder – 1/8th teaspoon
  • Heeng Powder/ Asafoetida – 1/8th teaspoon
  • Water – 375 ml
  • Salt – as per your taste

For Tempering

  • Mustard Seeds – ½ teaspoon
  • Dried whole Red Pepper – 2 nos
  • Coconut (Grated) – ½ cup
  • Coriander Leaves – 1 tablespoon (finely chopped)
  • Curry Leaves – 4-5

Procedure

Take a deep, heavy based pan and place the flour in it. To this add the ginger paste, green chili paste, heeng powder, red chili powder and salt. Mix them well. Now add the sour yoghurt to the bowl and form a smooth paste. Keep in mind to avoid lumps while mixing all the ingredients. Now add water to this paste and mix it very well always keeping in mind to pop all the bubbles.

Place this pan on high heat and bring it to bow. Keep stirring the mixture in order to avoid scorching. Do this until the paste gains an even consistency. One best way to test the right consistency of the mixture is by spreading a teaspoon of the batter on an ungreased surface. If after cooling, the batter comes off, then it has reached the appropriate consistency needed.

Once the mixture is cooked, use a rubber spatula and spread it on an ungreased surface in as thin layer as possible. Once this is done, leave it to cool down.

While the layers are cooling down, you can prepare the tempering. Heat the oil and crackle the mustard seeds, now add the curry leaves and red pepper to the oil. Stir it till the leaves turn light golden in color and the pepper leaves a pungent smell. To this add the coriander leaves and grated coconut. Make it a point to keep aside 1 teaspoon of grated coconut as well as coriander leaves aside.

Now you need to spread the tempering on the flour layers evenly. Once this is done, cut the layers into strips and roll them up like a scroll. See to it that the layers are rolled firmly, at the same time they do not break away.

Khandvi is ready! Arrange the scrolls on a serving dish and garnish it with the remaining coriander leaves and grated coconut. You can serve it with chili and tomato sauce.

  • Ghee
  • Coriander – Finely chopped
  • Sugar – 1 teaspoon

Procedure

Take a large pot and heat 1 teaspoon ghee in it. Now add cumin seeds to the ghee and fry it for 2 minutes. Once it turns light golden in color, add chopped onion to it and sauté till it turns brown in color. To this add ginger and green chilies. Fry it for another 5 minutes. Now you need to add turmeric powder and red chili powder to the pan and let it cook until the ghee separates from the mixture. This will take some time.

Once the ghee is separated add potatoes, washed rice and dal to the pot. Saute this for at least 5 minutes. Once sautéed, you can add green peas, raw mango, heeng powder, salt and sugar. Now add 4 cups of water to the pot and let it simmer for at least 20 to 25 minutes.

Once the rice and dal is cooked, take it off the flame. Garnish it with fresh coriander and 2 tablespoons of ghee. Serve hot.

Aam Shrikhand with Mango Salad

Gujarati cuisine is well known for its sweet dishes. So here is the recipe of the tempting Aam Shrikhand with Mango Salad. To prepare this you will need:

Ingredients

  • Hung Yoghurt – 2 cups
  • Fresh Mangoes – 300 gm

  • Garnet Yams – 4 medium sized (peel and slice into ½-inch-thick strips)
  • Fresh Flat-Leaf Parsley -2Tbsp (minced)
  • Ground Cumin – 2Tsp
  • Ground Coriander – 2Tsp
  • Garlic Powder – 2Tsp
  • Sweet Paprika – 2Tsp
  • Extra Virgin Olive Oil – ½ cup
  • Salt – As per taste
  • Sea salt for sprinkling

For the Maple Barbecue Sauce

  • Barbecue Sauce – 3/4th Cup
  • Maple Syrup – 3Tbsp

Procedure

Begin with pre-heating the oven at 400° F. While the oven is getting heated you can make the fries. In a bowl mix the Garlic, Cumin and Coriander powder along with Paprika, salt and extra virgin olive oil. Now add the pieces of Yam into this mixture and mix it in such a way that all the Yam sticks get coated.

Once the Yams are evenly coated, add Parsley to it and mix well. Now arrange the Yams in a single layer on a large baking sheet and bake it for at least 30 minutes or until the edges of turn brown. You can occasionally keep stirring the potatoes. This way you will get to know if they are properly cooked through.

While Potatoes/ Yams are getting cooked you can make the sauce. For this you need to mix the Maple syrup and Barbecue sauce in a small bowl.

Once the Potatoes are thoroughly baked, sprinkle sea salt on it and serve hot with the sauce on the side.

This surely is a very simple and tasty appetizer.

  • Large Shrimp – about 20
  • Chilies – 20 (mix of medium and mildly hot)
  • Garlic Cloves – 10 (thickly sliced)
  • Oregano – 1Tsp (freshly dried)
  • Ground Black Pepper – 1Tsp
  • Lemons – 2 (halved)
  • Sea Salt – 2Tsp
  • Extra Virgin Olive Oil – ½ Cup

Procedure

First of all you need to peel the shrimp. Remove the shell and tail but leave the heads on. As usual pre-heat the Oven, preferably at 475° F or above. Place two large cast iron pans (12-14 inches each) in the oven for at least 30 minutes.

Now take the shrimp in a bowl and add chilies and garlic to it. Season it with pepper, salt and oregano. Keep the bowl at room temperature until the Oven gets heated. Once the oven and the iron pans get heated, remove the cast iron pans and place an even amount of shrimp and pepper on each on the pans. Use mittens when you are removing the iron pans from the oven. Also see to it that you have evenly spaced shrimp and chilies on the bottom of the pan. In case all the chilies do not touch the bottom of the pan, you need not worry. It’s completely fine.

Again you need to bake this for around 5 minutes or until the shrimp turns pink in color and firm in texture. A lot will depend on the size of the shrimp you use, so we advise that you adjust the cooking time accordingly.

Once the shrimp is cooked you just have to squeeze lemon over it and drizzle it with olive oil and your mouth watering dish is ready!
